Celebrating “as high as an elephant’s eye” season

Even though she now lives in Martha’s Vineyard, her memories of orderly rows and kernels fairly popping with sweetness are fresh in her mind—and flowing from her paintbrush. We enjoy her blog for her recipes, of course, but also her watercolors and photography.

sb14.pngLet her “take you back” to a time when people seemed to have time for...spending time creatively and deliciously. If you like a little more heat and West Coast authenticity, we suggest augmenting the chili powder in her recipe with a seeded and chopped serrano pepper, to taste.

California Corn Salsa from Susan Branch

  • Kernels cut off of 3 ears of fresh corn (cooked or raw)

  • 1/2 red bell pepper, finely chopped

  • 1/4 c. red onion, minced

  • 1 ripe, bumpy-skinned avocado, cubed

  • juice of one juicy lime

  • 2 Tbsp. olive oil

  • 1/2 tsp. chili powder

  • 1/4 tsp. salt

  • 1/4 c. cilantro (or to taste)

Put first four ingredients into a bowl.  Combine lime juice, olive oil, chili powder and salt, and pour over the corn. Add the cilantro, gently toss. Watch out, it’s slightly dangerous; what sometimes happens when you eat this...
