This apple grilled chicken salad brings together crisp escarole, sweet apples, red onion, juicy grilled chicken, and melty cheddar toasts.

Ingredients

  • 2 boneless skinless chicken breasts
  • 4 slices seeded bread
  • 1 cup shredded cheddar cheese
  • 2 tablespoons grapeseed oil
  • 2 tablespoons cider vinegar
  • 1 tablespoon whole-grain mustard
  • Salt and black pepper, to taste
  • 1 large head escarole, chopped
  • 2 apples, thinly sliced
  • 1/4 red onion, thinly sliced

Instructions

  1. Grill the chicken over medium-high heat for about 15 minutes, turning as needed, until cooked through.
  2. Let the chicken rest briefly, then slice.
  3. Toast the bread on the grill for 1 to 3 minutes.
  4. Top the bread with cheddar and let it melt.
  5. Whisk together the grapeseed oil, cider vinegar, whole-grain mustard, salt, and black pepper in a large bowl.
  6. Add the escarole and toss.
  7. Add the apples and red onion and toss again.
  8. Divide the salad between plates.
  9. Top each plate with sliced chicken and serve with a cheddar toast.
