Instructions

Avocado Deviled Eggs

  1. Place eggs in a saucepan and cover with cold water. Bring to a boil, then cover and remove from heat. Let sit for 12 minutes.
  2. Cool eggs under cold water, then peel and cut in half. Scoop yolks into a bowl, adding avocado, mayonnaise, Dijon mustard, smoked paprika, salt, and pepper. Mash until smooth.
  3. Spoon or pipe the mixture into egg whites and sprinkle with extra paprika. Refrigerate until serving.

Cordon Bleu Stuffed Pork Loin

  1. Preheat oven to 375°F (190°C). Butterfly the pork loin and pound it to an even thickness (about 1/2 inch). Season both sides with salt and pepper.
  2. Spread Dijon mustard over the inside of the pork, then layer with ham, Swiss cheese, and spinach leaves.
  3. Roll up the pork tightly and secure with kitchen twine. Heat olive oil in an oven-safe skillet and sear the pork on all sides until golden brown.
  4. Transfer to the oven and roast for 40-50 minutes, or until internal temperature reaches 145°F (63°C). Let rest for 10 minutes before slicing.

Keto Cauliflower Mash

  1. Steam cauliflower florets until tender, about 10-12 minutes.
  2. Place cauliflower, butter, heavy cream, salt, and pepper in a food processor. Blend until smooth and creamy.
  3. Garnish with fresh chives before serving.

Broccoli Mash

  1. Steam broccoli until tender, about 10-12 minutes.
  2. In a food processor, combine broccoli with butter, Parmesan, salt, and pepper. Blend until smooth.
  3. Adjust seasoning as needed before serving.

Green Bean Casserole with Bacon

  1. Preheat oven to 350°F (175°C). Steam or blanch green beans until just tender.
  2. Cook bacon in a skillet until crispy, then remove and set aside. Leave 1 tablespoon of bacon grease in the skillet.
  3. Add heavy cream to the skillet and bring to a simmer. Stir in cheese until melted.
  4. In a baking dish, combine green beans, bacon, and cheese sauce. Bake for 10-15 minutes until bubbly.

Layered Overnight Salad

  1. In a large bowl, layer lettuce, cucumber, bell pepper, tomatoes, grated cheese, green onions, and bacon bits.
  2. For the dressing, mix together mayonnaise, sour cream, salt, and pepper. Spread the dressing over the top layer to seal the salad.
  3. Cover and refrigerate overnight. Toss before serving.

Keto Cranberry Bliss Bars

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix almond flour, coconut flour, sweetener, melted butter, salt, and vanilla. Press the mixture into the baking pan.
  3. Bake for 12-15 minutes until golden, then let cool.
  4. For frosting, beat together cream cheese, heavy cream, and additional sweetener to taste. Spread over cooled crust.
  5. Sprinkle with chopped cranberries, refrigerate for 1 hour, then cut into bars.

Notes

  • Make-Ahead Options: Prepare the deviled eggs and layered salad a day before to save time.
  • Rest the Pork: Let the pork loin rest 10 minutes before slicing for juicier cuts.
  • Keep Sides Warm: Use the oven on low (200°F) to keep mashes and casserole warm.
  • Salt Carefully: Ingredients like ham and bacon add salt, so taste before adding more.
  • Leftovers: Store leftovers in the fridge for up to 3 days; reheat gently to keep flavors fresh.
  • Festive Garnishes: Add fresh herbs or extra cranberries to make the dishes look extra festive.
