Easy Honey Bacon Roasted Potatoes Recipe

These Honey Bacon Roasted Potatoes are crispy on the outside, fluffy on the inside, and coated in a sticky honey glaze with savory bacon. It’s the ultimate easy side dish that turns simple potatoes into something special, sweet, salty, and downright addictive!

Ingredients

Scale
  • 2 lbs (900 g) baby potatoes, halved if large

  • 45 slices bacon, chopped

  • 2 tbsp olive oil

  • 2 tbsp honey (warm slightly if thick)

  • 1 tsp garlic powder

  • 1 tsp paprika (optional, for color and warmth)

  • ¾ tsp salt (adjust to taste)

  • ½ tsp freshly ground black pepper

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or foil for easy cleanup.

  2. Prepare potatoes: Scrub and halve potatoes. Pat completely dry with a paper towel (this helps them crisp).

  3. Season: In a large bowl, toss potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

  4. Add bacon: Mix in chopped bacon so it’s evenly scattered among the potatoes.

  5. Roast (first bake): Spread mixture on baking sheet in a single layer. Roast for 20 minutes.

  6. Glaze: Remove tray, drizzle honey over potatoes, and toss gently to coat.

  7. Roast (finish): Return to oven for another 15–20 minutes, stirring halfway, until potatoes are golden, sticky, and tender inside.

  8. Serve: Transfer to a platter, sprinkle with fresh parsley, and serve warm.

💡 Tip: For extra crispiness, broil for 1–2 minutes at the end — watch closely so the honey doesn’t burn.

Notes

  • Substitute for honey: Maple syrup works beautifully and gives a deeper, richer sweetness.

  • Make-ahead tip: Roast fully, cool, and refrigerate up to 2 days. Reheat at 400°F for 10 minutes to re-crisp.

  • Air fryer version: Cook at 400°F (200°C) for 18–20 minutes, shaking halfway.

  • Serving ideas: Pair with grilled chicken, roast beef, or eggs for brunch.

  • Storage: Keep in an airtight container in the fridge for up to 3 days.
