  • 4 boneless chicken breasts (thinly sliced or pounded)
  • 1 cup crushed pork rinds (or almond flour)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 tablespoon heavy cream (optional)

Instructions

  • Preheat your air fryer to 375°F (190°C) for 5 minutes.
  • In a shallow bowl, mix the crushed pork rinds (or almond flour), Parmesan cheese, garlic powder, paprika, salt, and pepper.
  • In another bowl, whisk the eggs with heavy cream.
  • Coat each chicken piece in almond flour (if using), dip it in the egg wash, and press it into the pork rind mixture until fully coated.
  • Lightly spray the air fryer basket with cooking spray. Place the schnitzel pieces in a single layer.
  • Cook for 8–10 minutes, flipping halfway, until the crust is golden and the internal temperature reaches 165°F (74°C).
  • Serve hot with keto-friendly sides like steamed veggies, cauliflower mash, or a fresh salad.
