Ingredients

For the Almond Bread:

  • 2 cups almond flour

  • 4 large eggs

For the Custard:

  • 4 eggs

  • 3/4 cup heavy cream (or almond milk)

  • 1/4 cup erythritol or monk fruit sweetener

  • 1 tbsp cinnamon

  • 1 tsp vanilla extract

  • Pinch of nutmeg (optional)

For Assembly:

  • 2 tbsp butter (for greasing and topping)

  • 1/4 cup chopped pecans or sliced almonds (optional)

  • Sugar-free maple syrup (optional for serving)

Instructions

  1. Make the Bread: Preheat oven to 350°F. Mix dry ingredients in one bowl, wet ingredients in another. Combine both, pour into a greased loaf pan, and bake for 25–30 minutes until a toothpick comes out clean. Let cool fully.

  2. Prepare the Bake: Slice cooled bread into cubes or thick slices. Place into a greased 8×8 baking dish.

  3. Make Custard: In a bowl, beat eggs. Add cream, sweetener, cinnamon, vanilla, and nutmeg. Pour over bread and gently press bread down so it soaks up the custard.
