A rich, creamy, and spicy cheese ball loaded with crispy bacon, cheddar, and fresh jalapeños. This easy keto appetizer doubles as a dinner side or snack, and fits perfectly into low carb and keto diets.
2 (8 oz) blocks cream cheese, softened
2 cups shredded sharp cheddar cheese
1 cup cooked and crumbled bacon
3–4 jalapeños, seeded and finely diced
1/4 cup chopped green onions
1/2 teaspoon garlic powder
Salt and pepper, to taste
1/2 cup chopped pecans (optional, for coating)
Extra bacon bits and jalapeño for outer coating
In a large bowl, mix cream cheese, cheddar, crumbled bacon, diced jalapeños, green onions, and garlic powder. Add salt and pepper.
Shape the mixture into one large ball or several small ones.
In a shallow dish, mix extra bacon bits, jalapeños, and pecans. Roll the cheese ball(s) in this until fully coated.
Wrap in plastic wrap and chill for at least 1 hour before serving.
Swap cheddar for pepper jack if you want it spicier.
To make it more filling, add cooked ground sausage.
Store in fridge for up to 5 days.
