Keto Bacon-Wrapped Brie Bites Recipe

Crispy bacon wrapped around warm, creamy brie—these keto bites are easy to make and perfect for parties, snacks, or a low-carb treat. Just a few ingredients, ready in minutes.

  • 8 strips of bacon (regular cut)

  • 1 wheel of brie (about 8 oz), cold

  • Toothpicks

  • Optional: cracked black pepper, smoked paprika, fresh thyme

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.

  2. Cut the brie into 1-inch cubes. Leave the rind on to hold the shape.

  3. Slice each strip of bacon in half.

  4. Wrap each brie cube with bacon and secure with a toothpick.

  5. Place on baking tray, spaced apart.

  6. Optional: sprinkle with pepper, paprika, or thyme.

  7. Bake for 15–20 minutes, until bacon is crispy.

  8. Let cool for 5 minutes before serving.

Notes

  • Brie should be cold for easier cutting.

  • Don’t use thick-cut bacon—it won’t crisp well.

  • Can prep ahead and refrigerate or freeze before baking.

  • Great with pickles or on a snack board.
