  • 8 slices regular-cut bacon

  • 8 cheese sticks (cheddar, mozzarella, or pepper jack)

  • Toothpicks or skewers

  • Optional: sliced jalapeños, yellow mustard, sugar-free ketchup, crumbled pork rinds, keto chili (no beans)

Instructions

  • Preheat grill to medium heat (or oven at 400°F).

  • Slice each hot dog lengthwise, creating a pocket without cutting all the way through.

  • Stuff each pocket with a cheese stick and optional jalapeños or mustard.

  • Wrap each hot dog with 1-2 bacon slices, securing with toothpicks. Wrap bacon at a slight angle for even cooking.

  • Grill hot dogs 10-15 minutes, turning often to avoid flare-ups, until bacon is crispy and cheese melts. Alternatively, bake on a rack for 15-20 minutes, broiling last 2 minutes for crispiness.

  • Serve hot with optional toppings or sides like sugar-free coleslaw or grilled veggies.
