For the Pork Chops:

  • 4 bone-in or boneless pork chops (1-inch thick)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

For the Balsamic Glaze:

  • ½ cup balsamic vinegar (no added sugar)
  • 2 tablespoons unsalted butter
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 tablespoon keto-friendly sweetener (monk fruit, erythritol, or stevia blend)
  • ½ teaspoon fresh thyme (or ¼ teaspoon dried)
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  • Season the Pork Chops – Pat the pork chops dry and season both sides with salt, pepper, garlic powder, and onion powder.
  • Sear the Pork Chops – Heat olive oil in a skillet over medium-high heat. Cook the pork chops for 3-4 minutes per side until golden brown. If thicker, lower heat and cook for another 2-3 minutes per side until the internal temperature reaches 145°F (63°C). Remove from the pan and set aside.
  • Make the Balsamic Glaze – In the same pan, lower heat to medium. Add minced garlic and cook for 30 seconds. Pour in balsamic vinegar, Dijon mustard, sweetener, thyme, and red pepper flakes. Simmer for 4-5 minutes until thickened. Stir in butter until melted.
  • Coat the Pork Chops – Return the pork chops to the pan and spoon the glaze over them. Let them warm up for 1-2 minutes.
  • Rest & Serve – Remove from heat and let the pork chops rest for 5 minutes before serving.

  • Use thick-cut pork chops for juicier results.
  • Let the pork rest before slicing to keep it tender.
  • If you prefer an oven method, sear the pork chops first, then bake at 400°F (200°C) for 8-10 minutes.
