Ingredients

  • 3 tbsp almond flour

  • 1 tbsp coconut flour

  • ½ tsp baking powder

  • Pinch of salt

  • 1 large egg

  • 1 tbsp melted butter (or coconut oil)

  • 2 tsp banana extract

  • 1 tbsp almond milk

  • tbsp erythritol or monk fruit sweetener

  • Optional: 1 tsp chopped walnuts or pecans

Instructions

  1. Melt the butter in a microwave-safe mug (about 20 seconds).

  2. Add egg, banana extract, almond milk, and sweetener. Stir well.

  3. Add almond flour, coconut flour, baking powder, and salt. Mix until smooth.

  4. Add nuts if using. Stir again.

  5. Microwave on high for 90 seconds.

  6. Let cool for 1–2 minutes before eating.

Notes

  • Use a wide mug to avoid overflow.

  • Don’t overcook—microwaves vary. Start with 80–90 seconds.
