Keto BBQ Chicken Quesadillas Recipe

Crispy, cheesy, and low-carb keto BBQ chicken quesadillas made in just minutes. Loaded with shredded chicken, melty cheese, and sugar-free BBQ sauce, all wrapped in keto tortillas. Perfect for a fast lunch, dinner, or snack.

  • 2 low-carb tortillas (like Mission Carb Balance or Egglife)

  • 1 cup shredded cooked chicken (rotisserie works great)

  • ½ cup shredded mozzarella

  • ½ cup shredded cheddar

  • 2 tablespoons sugar-free BBQ sauce

  • 1 tablespoon cream cheese

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt & pepper to taste

  • 1 tablespoon butter or olive oil (for pan)

Optional toppings: chopped green onions, sour cream, jalapeños, ranch, bacon bits

Instructions

  • In a bowl, mix shredded chicken, BBQ sauce, cream cheese, garlic powder, onion powder, salt, and pepper.

  • Heat a skillet over medium heat and add butter or oil.

  • Place one tortilla in the pan. Sprinkle half the mozzarella and cheddar on it.

  • Spread the chicken mixture on top of the cheese.

  • Add the rest of the cheese, then top with the second tortilla.

  • Cook for 3–4 minutes on each side, until crispy and golden.

  • Let it cool slightly, then slice and serve. Add toppings if you like.

Notes

  • You can swap chicken for turkey, pulled pork, or even canned chicken.

  • Use any melty cheese you have on hand.

  • To reheat, use a skillet for best texture.

  • For more flavor, add hot sauce or smoked paprika to the mix.

  • Store leftovers in the fridge for up to 3 days.
