2 low-carb tortillas (like Mission Carb Balance or Egglife)
1 cup shredded cooked chicken (rotisserie works great)
½ cup shredded mozzarella
½ cup shredded cheddar
2 tablespoons sugar-free BBQ sauce
1 tablespoon cream cheese
½ teaspoon garlic powder
½ teaspoon onion powder
Salt & pepper to taste
1 tablespoon butter or olive oil (for pan)
Optional toppings: chopped green onions, sour cream, jalapeños, ranch, bacon bits
In a bowl, mix shredded chicken, BBQ sauce, cream cheese, garlic powder, onion powder, salt, and pepper.
Heat a skillet over medium heat and add butter or oil.
Place one tortilla in the pan. Sprinkle half the mozzarella and cheddar on it.
Spread the chicken mixture on top of the cheese.
Add the rest of the cheese, then top with the second tortilla.
Cook for 3–4 minutes on each side, until crispy and golden.
Let it cool slightly, then slice and serve. Add toppings if you like.
You can swap chicken for turkey, pulled pork, or even canned chicken.
