These Keto Beef Taco Bowls are loaded with seasoned ground beef, fresh veggies, cheese, and creamy toppings—all without the carbs. Perfect for a quick dinner or easy meal prep.
For the beef:
1.5 lbs ground beef (80/20)
1 tbsp olive oil
1.5 tsp chili powder
1 tsp smoked paprika
1 tsp cumin
1/2 tsp onion powder
1/2 tsp garlic powder
Salt and pepper to taste
1/3 cup water
For the bowls:
1 head romaine or iceberg lettuce, chopped
1 cup cherry tomatoes, halved
1/2 red onion, diced
1 avocado, sliced or mashed
1/2 cup shredded cheddar cheese
1/2 cup sour cream or plain Greek yogurt
1/4 cup sliced black olives (optional)
1/4 cup salsa (no sugar added)
Fresh cilantro and lime wedges (optional)
Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up as it cooks.
Drain any excess grease, then add chili powder, paprika, cumin, onion powder, garlic powder, salt, and pepper. Stir to coat the beef evenly.
Pour in the water, reduce heat, and simmer for 3–5 minutes until thickened.
While the beef cooks, chop your lettuce, tomatoes, onion, and other toppings.
Build your bowl: Start with a base of lettuce, add beef, then layer on tomatoes, onion, cheese, sour cream, avocado, and other toppings.
Serve with fresh lime and cilantro if desired.
