Keto Blueberry Lemon Popsicles Recipe

These keto blueberry lemon popsicles are cold, creamy, and sweet without the sugar. Made with real fruit, lemon juice, and low-carb ingredients, they’re the perfect frozen snack for hot days and keto diets.

Ingredients

  • 1 cup blueberries (fresh or frozen)

  • 2/3 cup fresh lemon juice (about 45 lemons)

  • Zest of 1 lemon

  • 1/2 cup heavy cream

  • 2/3 cup unsweetened almond milk

  • 1/4 to 1/3 cup erythritol or allulose

  • 1/2 tsp vanilla extract (optional)

  • Pinch of salt

Instructions

  1. Zest and juice your lemons.

  2. Add blueberries to a blender.

  3. Add lemon juice, zest, cream, almond milk, sweetener, vanilla, and salt.

  4. Blend until smooth.

  5. Taste and adjust sweetness if needed.

  6. Pour mixture into popsicle molds.

  7. Insert sticks and freeze for at least 5 hours or overnight.

  8. Once frozen, remove from molds and store in freezer-safe bag.

Notes

  • Use coconut milk instead of almond milk for a nut-free version.

  • Adjust sweetener to taste. Some like it more tart, others sweeter.

  • For extra smooth texture, strain mixture before freezing.

  • Can add MCT oil or collagen for added fat and protein.
