This easy Keto Brussels Sprouts Salad is the perfect low-carb side dish if you’re tired of missing potato salad on your keto diet. Salad:
1 pound Brussels sprouts, trimmed and thinly sliced
4 slices bacon, cooked crispy and chopped
1/2 cup shredded or shaved Parmesan
1/3 cup sliced almonds or chopped walnuts (optional)
1/4 small red onion, thinly sliced
Fresh parsley, chopped (optional)
Dressing:
3 tablespoons mayonnaise
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Salt and black pepper, to taste
Trim and shred Brussels sprouts using a sharp knife or food processor.
Cook bacon until crispy. Drain and chop into pieces.
