1 whole bone-in prime rib roast (6–8 lbs)
2 tbsp olive oil or beef tallow
2 tsp kosher salt
1 tsp black pepper
Cajun Spice Rub:
1 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp cayenne pepper (adjust to taste)
1 tsp dried thyme
1 tsp dried oregano
1 tsp ground white pepper (optional)
½ tsp ground cumin
½ tsp red pepper flakes (optional)
Let the roast sit at room temperature for 2 hours before cooking.
Preheat oven to 225°F.
Pat the roast dry with paper towels. Rub with olive oil.
