Dry Ingredients:

  • 2 cups almond flour
  • 2 teaspoons ground cardamom
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients:

  • 3 large eggs
  • ⅓ cup unsweetened Greek yogurt (or sour cream)
  • ¼ cup melted butter or coconut oil
  • ⅓ cup granulated erythritol (or preferred keto-friendly sweetener)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven – Set oven to 325°F (163°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Dry Ingredients – In a medium bowl, whisk together almond flour, cardamom, cinnamon, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients – In a separate large bowl, whisk together eggs, yogurt, melted butter, sweetener, and vanilla extract until smooth.
  4. Combine Wet & Dry – Slowly mix the dry ingredients into the wet until fully combined. The batter will be thick.
  5. Bake – Pour batter into the prepared loaf pan and smooth out the top. Bake for 35-45 minutes or until golden and a toothpick inserted in the center comes out clean.
  6. Cool & Serve – Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

  • For extra moisture, use full-fat Greek yogurt or sour cream.
  • If you prefer a sweeter bread, add an extra tablespoon of sweetener.
