Soft, buttery keto caramel candy made in the microwave with just a few simple ingredients. This is a low carb, sugar-free twist on homemade caramel candy that melts in your mouth and works perfectly as a holiday treat or everyday snack.
1 cup allulose
1/2 cup heavy cream
6 tbsp unsalted butter
1 tsp vanilla extract
pinch of sea salt
Optional: 1 tbsp almond butter or chopped nuts
Add allulose, cream, and butter to a large microwave-safe bowl.
Microwave on high for 2 minutes. Stir well.
Continue microwaving in 1-minute intervals, stirring between each, until it turns golden brown (usually 6–8 minutes total).
Stir in vanilla and sea salt.
Pour into a parchment-lined dish and let cool completely.
Once set, cut into squares. Store in fridge or freezer.
Use allulose for best texture. Other sweeteners may turn gritty.
For a firmer caramel, cook a bit longer. For softer, cook less.
Add almond butter or nuts for a fudge caramel twist.
Makes great homemade food gifts during the holidays.
