Keto Caramel Candy Recipe

Soft, buttery keto caramel candy made in the microwave with just a few simple ingredients. This is a low carb, sugar-free twist on homemade caramel candy that melts in your mouth and works perfectly as a holiday treat or everyday snack.

Ingredients

  • 1 cup allulose

  • 1/2 cup heavy cream

  • 6 tbsp unsalted butter

  • 1 tsp vanilla extract

  • pinch of sea salt

  • Optional: 1 tbsp almond butter or chopped nuts

Instructions

  1. Add allulose, cream, and butter to a large microwave-safe bowl.

  2. Microwave on high for 2 minutes. Stir well.

  3. Continue microwaving in 1-minute intervals, stirring between each, until it turns golden brown (usually 6–8 minutes total).

  4. Stir in vanilla and sea salt.

  5. Pour into a parchment-lined dish and let cool completely.

  6. Once set, cut into squares. Store in fridge or freezer.

Notes

  • Use allulose for best texture. Other sweeteners may turn gritty.

  • For a firmer caramel, cook a bit longer. For softer, cook less.

  • Add almond butter or nuts for a fudge caramel twist.
