Crispy, cheesy keto cauliflower bites are a perfect low-carb snack or appetizer. Easy to make with simple ingredients like cauliflower, cheese, and almond flour. Great for parties, meal prep, or a quick keto-friendly treat

  • 1 medium cauliflower head (about 45 cups, riced)
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/3 cup almond flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Rice the cauliflower by pulsing in a food processor or grating manually. Microwave the riced cauliflower for 3-4 minutes, let cool, then squeeze out all excess water using a kitchen towel.
  • In a large bowl, mix the cauliflower, cheddar cheese, Parmesan, almond flour, eggs, garlic powder, onion powder, paprika, salt, and pepper until a dough forms.
  • Scoop tablespoon-sized portions, roll into balls, and flatten slightly to shape into bites. Place on the baking sheet.
  • Bake for 20-25 minutes, flipping halfway, until golden and crispy.
  • Let cool for a few minutes before serving with your favorite dipping sauce.

Notes

  • Be sure to squeeze out the cauliflower’s water to prevent soggy bites.
  • These bites can be frozen after baking for a quick snack later. Reheat in the oven or air fryer for best results.
  • Add extra spices or herbs for more flavor, like cayenne pepper or Italian seasoning.
