  • 4 medium zucchinis, grated

  • 1 cup shredded cheddar cheese

  • ½ cup grated Parmesan cheese

  • 2 large eggs

  • ½ cup almond flour

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt and pepper to taste

  • 2 tablespoons olive oil or butter

Optional:

  • Fresh chopped herbs (parsley, chives)

Instructions

  1. Grate zucchini and sprinkle with salt. Let sit in a colander for 15–20 minutes.

  2. Squeeze out as much moisture as possible using a clean towel or cheesecloth.

  3. In a large bowl, mix grated zucchini, eggs, almond flour, cheddar, Parmesan, garlic powder, onion powder, salt, and pepper.

  4. Preheat oven to 375°F (190°C).

  5. Grease an 8×8-inch baking dish with olive oil or butter.

  6. Spread mixture evenly into dish, don’t press too hard.

  7. Bake for 35–40 minutes until golden brown and edges start to crisp.

  8. Let cool slightly before slicing.
