  • 8 oz cream cheese, softened

  • 1 cup sharp cheddar cheese, shredded

  • 1 tbsp lime juice (fresh)

  • 1 tsp lime zest

  • 12 tsp chili powder (adjust to taste)

  • 1 jalapeno, seeded and diced (optional for heat)

  • 2 green onions, chopped

  • 1/2 tsp garlic powder

  • Salt and pepper to taste

  • 2 tbsp fresh parsley or cilantro, chopped (for coating)

  • Optional: 1/4 cup crushed pecans or sunflower seeds for rolling

  • Optional: 2 tbsp finely diced pineapple or green bell pepper for a sweet touch

Instructions

  • In a medium bowl, mix softened cream cheese and shredded cheddar until smooth.

  • Add lime juice, zest, chili powder, garlic powder, jalapeno, salt, and pepper. Stir well to combine.

  • Fold in chopped green onions (reserve a few for coating if desired).

  • Shape mixture into a ball using your hands or a spoon.

  • On a plate, combine chopped parsley and any extra green onions or crushed nuts/seeds. Roll the cheese ball in the mixture to coat all sides.

  • Wrap the ball in plastic wrap and refrigerate for at least 1 hour to firm up.

  • Serve with keto crackers, sliced veggies, or pork rinds.
