Ingredients

Scale

Chocolate Zucchini Bread Batter

  • 1 ½ cups almond flour

  • ¼ cup coconut flour

  • ½ cup unsweetened cocoa powder

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 3 large eggs

  • ½ cup keto sweetener (erythritol, monk fruit, or allulose)

  • ⅓ cup melted coconut oil or butter

  • 1 tsp vanilla extract

  • 1 ½ cups shredded zucchini (about 1 medium, squeezed dry)

  • ½ cup sugar-free chocolate chips (optional)

Cream Cheese Filling

  • 8 oz cream cheese, softened

  • 1 egg yolk

  • 3 tbsp powdered keto sweetener

  • ½ tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×5 loaf pan with parchment paper.

  2. Grate zucchini, then squeeze out excess water with a towel. Set aside.

  3. Make cream cheese filling: beat cream cheese, egg yolk, powdered sweetener, and vanilla until smooth.

  4. In a large bowl, whisk almond flour, coconut flour, cocoa, baking powder, baking soda, and salt.

  5. In another bowl, whisk eggs, granulated sweetener, melted oil/butter, and vanilla.

  6. Stir wet and dry ingredients together, then fold in zucchini. Batter will be thick.

  7. Spread half the batter in the loaf pan. Add cream cheese filling in a layer. Top with the rest of the batter. Swirl lightly if desired.

  8. Bake 55–65 minutes, until a toothpick in the bread (not the filling) comes out clean.

  9. Cool for 15 minutes before removing from pan. Let cool fully before slicing.

Notes

  • Make sure zucchini is well drained or bread may be soggy.

  • Store in fridge up to 7 days or freeze slices up to 2 months.

  • Cover with foil during baking if top browns too quickly.
