For the Salad:
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño, finely chopped (optional)
  • 4 cups chopped romaine lettuce (or mixed greens)
For the Dressing:
  • 3 tbsp olive oil
  • Juice of 2 limes
  • 1 clove garlic, minced
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Cook the Shrimp: Heat olive oil in a pan over medium heat. Toss shrimp with garlic powder, smoked paprika, salt, and black pepper. Cook for 1-2 minutes per side until pink and slightly golden. Squeeze fresh lime juice over the shrimp and set aside.

  2. Prep the Salad: Dice the avocados, slice the cherry tomatoes, and thinly slice the red onion. Chop the cilantro and jalapeño (if using). Add everything to a large salad bowl along with the romaine lettuce.

  3. Make the Dressing: In a small bowl, whisk together olive oil, lime juice, minced garlic, salt, and black pepper. Taste and adjust seasoning if needed.

  4. Assemble the Salad: Add the cooked shrimp to the salad bowl. Drizzle the dressing over the top and gently toss everything together.
