For the Casserole:
6 slices keto sandwich bread (dried or toasted)
5 large eggs
1/2 cup heavy cream
1/4 cup unsweetened almond milk
2 tsp ground cinnamon
1 tsp vanilla extract
3 tbsp powdered erythritol
Pinch of salt
2 tbsp melted butter
For the Cinnamon Swirl:
2 tbsp softened butter
2 tbsp erythritol
1 tsp cinnamon
For the Icing (optional):
3 tbsp cream cheese, softened
1 tbsp heavy cream
1 tbsp powdered sweetener
1/2 tsp vanilla extract
Cut keto bread into cubes or strips and toast if fresh.
In a bowl, whisk eggs, cream, almond milk, vanilla, cinnamon, sweetener, and salt.
Add bread to the mix and let soak for 5–10 minutes.
In a small bowl, mix cinnamon swirl ingredients into a smooth paste.
Layer soaked bread into a greased baking dish. Drop spoonfuls of the swirl mix across the top. Drizzle with melted butter.
Cover and refrigerate overnight (or bake immediately if needed).
