Ingredients

Scale
  • 2 cups almond flour
  • ½ cup powdered erythritol (or keto-friendly sweetener)
  • 1 ½ tablespoons ground cinnamon
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • Optional glaze: powdered erythritol with a few drops of water or almond milk for drizzling

Instructions

  • Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together almond flour, powdered erythritol, cinnamon, and salt.
  • In another bowl, beat egg whites until soft peaks form. Add vanilla extract.
  • Gently fold the egg whites into the dry ingredients until combined.
  • Place dough between two sheets of parchment paper and roll out to ¼-inch thickness.
  • Use a star-shaped cookie cutter to cut out shapes and place them on the baking sheet.
  • Bake for 12-15 minutes, or until edges are slightly golden. Allow to cool completely.
  • Optional: Drizzle with glaze once cooled.

Notes

  • For best texture, use finely ground almond flour.
  • If dough is too sticky, chill it in the fridge for 10-15 minutes before rolling out.
  • Store in an airtight container for up to a week, or freeze for longer storage.
