Soft, sweet truffles made with coconut, almond flour, and just a few dates. No baking. Keto-friendly. Perfect for a quick snack or dessert.

Ingredients

Scale
  • 56 soft Medjool dates, pitted

  • 1/2 cup unsweetened shredded coconut

  • 1/3 cup almond flour

  • 2 tbsp coconut oil (melted)

  • 1 tbsp chia seeds or flaxseed meal (optional)

  • 1/4 tsp sea salt

  • 1/2 tsp vanilla extract

  • 2 tbsp cocoa powder (optional)

  • A few drops of stevia or monk fruit (optional)

  • Extra coconut or cocoa powder for rolling

Instructions

  1. Soak dates in warm water for 5 minutes if they’re firm, then drain well.

  2. Mash dates in a bowl with a fork.

  3. Add coconut, almond flour, coconut oil, vanilla, salt, and cocoa (if using). Mix well.

  4. Taste and add sweetener if needed.

  5. Scoop out small amounts and roll into balls.

  6. Roll each ball in coconut or cocoa powder.

  7. Chill in fridge for at least 30 minutes before eating.

Notes

  • Store in fridge for 7 days or freezer for 1 month.

  • To reduce carbs, use fewer dates and more coconut or seeds.

  • Great as a quick pre- or post-workout bite.

  • Make it nut-free by swapping almond flour with sunflower seed flour or coconut flour (use less).
