Ingredients

Scale

For the base:

  • 1 medium head of cauliflower (or 1½ cups cauliflower rice)

  • 5 cups chicken broth

  • 1 tbsp sesame oil

  • Salt to taste

  • ¼ tsp white pepper

Optional flavor boosters:

  • 1-inch piece of ginger, thinly sliced

  • 2 garlic cloves, smashed

  • 1 tbsp soy sauce or coconut aminos

  • 1 tsp fish sauce

Toppings (your choice):

  • Soft-boiled eggs

  • Shredded chicken

  • Sliced scallions

  • Pickled mustard greens

  • Chopped cilantro

  • Chili oil

  • Fried shallots

Instructions

  1. If using whole cauliflower, pulse in a food processor until it looks like rice.

  2. Heat sesame oil in a large pot over medium heat. Add ginger and garlic (if using), stir for 30 seconds.

  3. Pour in the broth and bring to a boil.

  4. Add cauliflower rice. Lower heat and simmer uncovered for 30–40 minutes, stirring occasionally. Add more broth if needed.

  5. Season with salt, white pepper, soy sauce, and fish sauce.

  6. Once thick and creamy, remove from heat and ladle into bowls.

  7. Add your favorite toppings and serve hot.

Notes

  • Use bone broth for extra flavor and nutrients.

  • Add collagen powder for thicker texture.

  • Adjust toppings to fit your taste or what’s in your fridge.

  • Can be made ahead and reheated with a little water or broth.
