A rich, creamy, and flavorful butter chicken made in the slow cooker, keto-friendly, low in carbs, and full of comfort. Simple to prepare, and it tastes just like your favorite Indian takeout but without the sugar or carbs. Perfect for busy nights or meal prep.

For the Chicken:

  • 2 lbs boneless, skinless chicken thighs (cut into bite-sized pieces)

  • 1 cup heavy cream

  • 1 cup canned crushed tomatoes (no added sugar)

  • ½ cup unsalted butter

  • 3 garlic cloves, minced

  • 1 small onion, finely chopped

  • 1 tablespoon grated fresh ginger (or 1 teaspoon ground)

  • 2 tablespoons garam masala

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • 1 teaspoon turmeric

  • 1 teaspoon salt

  • ¼ teaspoon cayenne pepper (optional)

To Finish:

  • ¼ cup heavy cream (added at the end)

  • 1 tablespoon lemon juice

  • Fresh cilantro for garnish

Optional for Serving:

  • Cauliflower rice, keto naan, or steamed vegetables

Instructions

  1. Trim chicken thighs and cut into small pieces.

  2. In a bowl, mix tomato puree, 1 cup heavy cream, garlic, ginger, garam masala, cumin, chili powder, turmeric, salt, and cayenne. Stir well.

  3. Add chopped onions and butter to the bottom of your Crockpot.

  4. Place chicken pieces on top and pour the sauce mixture over them. Stir gently to coat the chicken evenly.

  5. Cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is tender and the sauce thickens.

  6. Stir in ¼ cup heavy cream and lemon juice about 20 minutes before serving. Let it cook uncovered to thicken slightly.

  7. Garnish with chopped cilantro. Serve hot over cauliflower rice or with keto naan.

Notes

  • Chicken thighs work best for tenderness and flavor.

  • If the sauce is too thin, add 1–2 tablespoons of cream cheese at the end.

  • Store leftovers in the fridge for up to 4 days or freeze for up to 2 months.

  • Reheat gently on the stove with a splash of cream.

  • Adjust spice levels to taste — more cayenne for heat, less for mild
