This Keto Cucumber Mint Cooler is a light and refreshing drink made with real cucumber, fresh mint, lime, and ice-cold water. It’s low in carbs, quick to make, and perfect for hot days or when you need a clean, hydrating pick-me-up without the sugar.

Ingredients

  • 1 medium cucumber (peeled or unpeeled)

  • 1012 fresh mint leaves

  • Juice from 1 large lime (about 2 tablespoons)

  • 2 cups cold water or sparkling water

  • Ice cubes (as needed)

  • ¼ teaspoon keto-friendly sweetener (optional, adjust to taste)

Instructions

  1. Wash and slice the cucumber. Peel if you want a smoother taste.

  2. Add cucumber slices, mint leaves, lime juice, and sweetener (if using) to a blender.

  3. Pour in ½ cup of the cold water and blend until smooth.

  4. Strain the mixture through a fine mesh sieve into a pitcher to remove pulp.

  5. Add the remaining 1½ cups of water or sparkling water and stir well.

  6. Fill glasses with ice and pour in the cooler. Serve right away.

  7. Garnish with mint or cucumber slices if you want to look fancy (optional).

Notes

  • Adjust sweetener or lime to match your taste.

  • Use crushed ice for extra chill and faster cooling.

  • Store leftover mix (without ice) in the fridge for up to 3 days.
