For the Pork Chops:

  • 4 boneless pork chops (or bone-in)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

  • 2 tablespoons olive oil or butter

For the Dijon Cream Sauce:

  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons Dijon mustard
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ¼ cup grated Parmesan cheese (optional)
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme (optional)

Instructions

  1. Season the pork chops – Pat the pork dry with a paper towel, then season both sides with salt, black pepper, garlic powder, and paprika.
  2. Sear the pork – Heat a skillet over medium-high heat. Add olive oil or butter and let it get hot. Cook the pork chops for 4-5 minutes per side until golden brown. Remove from the pan and cover to keep warm.
  3. Make the sauce – Reduce heat to medium. Melt the butter, then add garlic and cook for 30 seconds until fragrant. Pour in the heavy cream, Dijon mustard, salt, black pepper, and onion powder. Stir well and let it simmer for 2-3 minutes.
  4. Finish the sauce – Add Parmesan cheese and thyme, stirring until melted and smooth.
  5. Return the pork to the pan – Place the pork chops back in the skillet, spoon sauce over them, and let them simmer for 2-3 minutes to soak up the flavor.
  6. Serve and enjoy – Plate the pork chops and spoon extra sauce on top. Serve with low-carb sides like roasted vegetables or cauliflower mash.
