For the Burgers:

  • 1 lb ground game meat (venison, elk, or bison)
  • 1/4 cup pork fat or beef tallow
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Caramelized Onions:

  • 2 medium yellow onions, thinly sliced
  • 2 tbsp butter
  • 1/2 tsp salt
  • 1/2 tsp erythritol or monk fruit sweetener (optional)

Toppings & Assembly:

  • Lettuce leaves or keto buns
  • Sliced avocado
  • Sugar-free pickles
  • Cheese (optional)
  • Dijon or spicy mustard

Instructions

  • Prepare the Burger Patties:
    In a bowl, mix the game meat, pork fat, egg, and seasonings until combined. Form into 4 patties and chill in the fridge for 20 minutes.
  • Caramelize the Onions:
    Melt butter in a skillet over medium heat. Add onions and salt, then reduce heat to low. Stir occasionally and cook for 20–25 minutes until golden. If using sweetener, add it in the last 5 minutes.
  • Cook the Burgers:
    Heat a grill or skillet over medium-high heat. Cook patties for 4–5 minutes per side or until desired doneness. Add cheese in the last minute if using.
  • Assemble the Burgers:
    Place each patty on a lettuce leaf or keto bun. Top with caramelized onions, avocado, pickles, mustard, and any other toppings you like.

Notes

  • Add a little more pork fat if your game meat is very lean to keep the burgers juicy.
  • Caramelized onions can be made ahead and stored in the fridge for up to a week.
