Keto Garlic Butter Chicken Bites with Asparagus

  • 1.5 lbs boneless chicken breast or thighs, cut into bite-sized pieces

  • 1 teaspoon paprika

  • 1 teaspoon onion powder

  • Salt and pepper to taste

  • 1 tablespoon olive oil

  • 3 tablespoons unsalted butter

  • 5 garlic cloves, minced

  • Juice of ½ lemon

  • 1 tablespoon chopped fresh parsley

  • 1 bunch asparagus, ends trimmed

  • 1 tablespoon butter (for asparagus)

  • Pinch of salt for asparagus

Instructions

  1. Season chicken with paprika, onion powder, salt, and pepper.

  2. Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and sear 3–4 minutes per side until golden and cooked through. Remove from pan and set aside.

  3. In the same skillet, melt 3 tablespoons butter. Add garlic and cook 1 minute until fragrant. Add lemon juice and stir.

  4. Return chicken to the pan and toss to coat in garlic butter.

  5. Move chicken aside (or remove briefly). Add asparagus with 1 tablespoon butter and a pinch of salt. Sauté 4–5 minutes until tender-crisp.

  6. Stir everything together. Sprinkle with parsley. Serve warm.

Notes

  • Swap asparagus for green beans or broccoli if needed.

  • Add a pinch of red pepper flakes for a little heat.

  • Store leftovers in an airtight container for up to 3 days.

  • Add dinner rolls on the side if you’re feeding non-keto eaters.
