Dry Ingredients:

  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 1/4 tsp xanthan gum

Wet Ingredients:

  • 4 large eggs
  • 1/4 cup olive oil
  • 1 tbsp apple cider vinegar

Topping:

  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme leaves
  • Sea salt flakes
  • Extra olive oil for drizzling

Instructions

  • Preheat & Prep:
    Preheat your oven to 375°F (190°C). Line a medium-sized baking dish with parchment paper and lightly grease it with olive oil.
  • Mix Dry Ingredients:
    In a large bowl, whisk together the almond flour, coconut flour, baking powder, and xanthan gum.
  • Mix Wet Ingredients:
    In a separate bowl, whisk the eggs until frothy. Add olive oil and apple cider vinegar, then whisk until combined.
  • Combine Wet & Dry:
    Slowly pour the wet ingredients into the dry mixture, stirring with a spatula until a thick dough forms.
  • Spread Dough:
    Transfer the dough to the prepared baking dish. Spread it out evenly, about 1 inch thick.
  • Add Toppings:
    Drizzle olive oil over the dough, then use your fingers to make dimples across the surface. Sprinkle minced garlic, rosemary, thyme, and sea salt on top.
  • Bake:
    Bake for 20-25 minutes, or until the focaccia is golden brown and firm to the touch.
  • Cool & Serve:
    Let the focaccia cool in the dish for 10 minutes, then remove and slice into squares or strips. Serve warm or at room temperature.

  • You can store leftovers in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days.
