Ingredients

  • 10 oz goat cheese (plain)

  • 4 oz cream cheese (full fat)

  • 2 garlic cloves, finely minced

  • 2 tbsp fresh parsley, chopped

  • 1 tbsp fresh chives, chopped

  • 1 tbsp fresh dill (or 1 tsp dried)

  • ½ tsp lemon zest

  • Salt & pepper to taste
    For the coating:

  • ½ cup chopped pecans or walnuts

  • 1 tbsp chopped fresh herbs (any mix of parsley, dill, or chives)

  • Pinch of chili flakes (optional)

Instructions

  • Let goat cheese and cream cheese sit at room temp for 15–20 minutes to soften.

  • In a bowl, mix cheeses, garlic, herbs, lemon zest, salt, and pepper until smooth.

  • Taste and adjust seasoning.

  • Shape the cheese mixture into a ball (wrap and chill for 10 min if too soft).

  • Roll cheese ball in chopped nuts, chili flakes, and more herbs to coat.

  • Wrap in plastic and chill for at least 1 hour before serving.

Notes

Make ahead up to 2–3 days. Store in fridge, tightly wrapped. Great with veggies, low-carb crackers, or sliced meats. Swap herbs or nuts depending on what you have. Add bacon or a splash of hot sauce for extra flavor.
