Crispy on the outside, juicy inside—these Keto Ginger Chicken Meatballs are packed with flavor and perfect for anyone doing a keto diet. Made with ground chicken, pork rinds, and cheese, they cook up fast in the air fryer and make the best low carb dinner or snack.

Ingredients

  • 1 lb ground chicken (or half chicken, half pork)

  • ½ cup crushed pork rinds

  • 1 egg

  • 2 garlic cloves, minced

  • 1 tbsp fresh ginger, grated

  • 2 green onions, chopped

  • 1 tbsp coconut aminos or soy sauce

  • ½ cup shredded cheese (cheddar or mozzarella)

  • Salt and pepper, to taste

  • Optional: sesame oil or chili flakes for extra flavor

Instructions

  • In a large bowl, mix ground chicken, crushed pork rinds, egg, garlic, ginger, green onions, soy sauce, and shredded cheese. Season with salt and pepper.

  • Form into small meatballs, about the size of a ping pong ball. Chill in the fridge for 10 minutes to firm up.

  • Preheat air fryer to 380°F (193°C).

  • Spray basket lightly with oil and place meatballs in a single layer.

  • Cook for 12–15 minutes, flipping halfway, until golden and cooked through.

  • Serve with dipping sauce or over cauliflower rice for a low carb meal.

Notes

  • Use ground pork for richer flavor.

  • Freeze cooked or uncooked meatballs for later.

  • Reheat in air fryer at 350°F for 5–6 minutes.

  • Works great as Appetizer Chicken or in lettuce wraps.

  • For spicier meatballs, add chili flakes or a dash of hot sauce.
