Crispy on the outside, juicy inside—these Keto Ginger Chicken Meatballs are packed with flavor and perfect for anyone doing a keto diet. Made with ground chicken, pork rinds, and cheese, they cook up fast in the air fryer and make the best low carb dinner or snack.
1 lb ground chicken (or half chicken, half pork)
½ cup crushed pork rinds
1 egg
2 garlic cloves, minced
1 tbsp fresh ginger, grated
2 green onions, chopped
1 tbsp coconut aminos or soy sauce
½ cup shredded cheese (cheddar or mozzarella)
Salt and pepper, to taste
Optional: sesame oil or chili flakes for extra flavor
In a large bowl, mix ground chicken, crushed pork rinds, egg, garlic, ginger, green onions, soy sauce, and shredded cheese. Season with salt and pepper.
Form into small meatballs, about the size of a ping pong ball. Chill in the fridge for 10 minutes to firm up.
Preheat air fryer to 380°F (193°C).
Spray basket lightly with oil and place meatballs in a single layer.
Cook for 12–15 minutes, flipping halfway, until golden and cooked through.
Serve with dipping sauce or over cauliflower rice for a low carb meal.
Use ground pork for richer flavor.
Freeze cooked or uncooked meatballs for later.
