2-inch piece fresh ginger, peeled and sliced thin
2 stalks fresh lemongrass, chopped or smashed
1 lime, cut into wedges
3–4 cups water
Optional: a few fresh mint leaves or a slice of turmeric
Optional: 1–2 drops liquid stevia or monk fruit (for sweetness)
Smash the lemongrass slightly to release the oils.
Add the ginger and lemongrass to a small pot with 3–4 cups of water.
Bring to a low boil, then reduce heat and simmer for 10–15 minutes.
Turn off the heat and let the tea sit for 5 more minutes.
Strain into a cup.
Squeeze in lime juice and add mint if using.
Add sweetener if needed. Stir and sip.
You can drink this hot or pour over ice for a refreshing cold tea.
