Keto Gorilla Bread for Valentine’s Day

This Keto Gorilla Bread is soft, buttery, and full of warm cinnamon sweetness with a gooey cream cheese center. Made with low-carb fathead dough, it’s a sugar-free treat perfect for the Keto Diet and Valentine’s Day. Drizzle with keto caramel sauce for extra flavor. Easy to make, fun to pull apart, and so delicious!

For the Dough:
  • 1 ½ cups mozzarella cheese, shredded
  • 2 oz cream cheese
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1 large egg
  • ½ tsp vanilla extract
  • Pinch of salt
For the Cinnamon “Sugar” Coating:
  • ⅓ cup granulated keto sweetener (monk fruit, erythritol, or allulose)
  • 1 tbsp cinnamon
  • ¼ cup butter, melted
For the Filling:
  • 4 oz cream cheese, cut into small cubes
  • 2 tbsp granulated keto sweetener
For the Caramel Sauce:
  • ¼ cup butter
  • ¼ cup heavy cream
  • ¼ cup brown keto sweetener
  • ½ tsp vanilla extract
  • Pinch of salt

Instructions

Make the Dough: Melt mozzarella and cream cheese together in a microwave-safe bowl in 30-second intervals, stirring until smooth. Add almond flour, baking powder, egg, vanilla, and salt. Mix until a dough forms. Knead until smooth.

2️⃣ Prep the Filling & Coating: In a bowl, mix sweetener and cinnamon. In another bowl, toss cream cheese cubes with sweetener.

3️⃣ Assemble: Preheat oven to 350°F (175°C). Grease a bundt or loaf pan. Divide dough into 12-14 balls. Flatten, add a sweetened cream cheese cube inside, seal, then roll in melted butter and cinnamon sweetener mix. Place in pan.

4️⃣ Make the Caramel Sauce: Melt butter in a saucepan, then stir in cream, brown keto sweetener, vanilla, and salt. Simmer for 2-3 minutes. Pour over the dough balls in the pan.

5️⃣ Bake & Serve: Bake for 25-30 minutes until golden brown. Cool for 5-10 minutes before serving. Drizzle with extra caramel sauce if desired.

Notes

  • If the dough is too sticky, chill for 5 minutes before handling.
  • Store leftovers in the fridge for up to 3 days or freeze for 2 months. Reheat before serving.
  • For a crunchier texture, sprinkle chopped pecans or walnuts before baking.
