  • 1 ¾ cups almond flour
  • ¼ cup coconut flour
  • ½ cup powdered erythritol (or keto-friendly sweetener)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • ½ cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Green food coloring (optional)
  • Sugar-free red candies or food coloring gel for decoration

Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together almond flour, coconut flour, powdered erythritol, baking powder, and salt. Set aside.
  • In another bowl, cream softened butter and powdered sweetener until light and fluffy using a hand or stand mixer.
  • Add the egg and vanilla extract to the butter mixture. Mix until smooth.
  • Slowly add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  • Add a few drops of green food coloring and mix until the dough is evenly colored.
  • Scoop out dough using a tablespoon, roll into balls, and flatten gently on the baking sheet. Add a red candy or leave plain for decoration.
  • Bake for 10-12 minutes, or until the edges are set but not browned.
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely. Decorate as needed.

Notes

  • For dairy-free cookies, substitute butter with coconut oil.
  • Chill the dough for 15 minutes if it feels too sticky to handle.
  • Store in an airtight container at room temperature for 5-7 days or in the fridge for up to 2 weeks.
