This easy keto ground beef and cauliflower hash is a quick, low carb dinner made with simple pantry staples. Great for busy nights, meal prep, or anyone following a keto diet. Perfect as a casserole, skillet hash, or even stuffed in a low carb sandwich wrap.
1 lb ground beef (80/20 preferred)
1 medium head cauliflower, riced (or 4 cups frozen riced cauliflower)
1 small onion, chopped
2 garlic cloves, minced
1 cup shredded cheddar cheese
2 tbsp cream cheese
1 tbsp olive oil or butter
Salt and pepper to taste
1/2 tsp paprika or smoked paprika
Optional: bell peppers, spinach, mushrooms, taco or Italian seasoning
In a large skillet over medium heat, warm the oil or butter.
Add ground beef, break it up with a spatula, and cook until browned. Season with salt, pepper, and paprika.
Add chopped onion and garlic. Sauté until soft.
Stir in the riced cauliflower. Cook for 4–5 minutes until softened.
Add cream cheese and stir until melted and creamy.
Mix in shredded cheddar (reserve some for topping if baking).
Option A: Serve as a skillet hash with crispy edges.
Option B: Transfer to a baking dish, top with cheese, and bake at 375°F for 15–20 minutes until bubbly and golden.
Use pre-riced frozen cauliflower for a faster prep.
Add hot sauce or chili flakes for heat.
Store leftovers in the fridge for up to 4 days.
