Keto Herb Butter Ribeye Steak

For the Steak:

  • 1 ribeye steak (about 1-inch thick)
  • 1 tablespoon olive oil or avocado oil
  • Salt and black pepper (to taste)
  • 1 teaspoon garlic powder (optional)

For the Herb Butter:

  • 4 tablespoons unsalted butter (softened)
  • 1 clove garlic (minced)
  • 1 tablespoon fresh parsley (chopped)
  • 1 teaspoon fresh thyme (chopped)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon lemon juice (optional)

Instructions

 

  • Make the Herb Butter: In a small bowl, mix softened butter with garlic, parsley, thyme, salt, black pepper, and lemon juice. Stir well, then roll into a log using plastic wrap. Refrigerate until firm.
  • Prep the Steak: Let the ribeye sit at room temperature for 30 minutes. Pat dry with paper towels, rub with oil, and season with salt, pepper, and garlic powder.
  • Cook the Steak: Heat a cast-iron skillet over high heat for 3-4 minutes until very hot. Sear the steak for 3-4 minutes on one side, then flip and cook another 3-4 minutes or until desired doneness.
  • Rest and Serve: Remove steak from the pan, place a slice of herb butter on top, and let it rest for 5 minutes before slicing. Enjoy!

Notes

  • For medium-rare, cook to an internal temperature of 130°F. For medium, aim for 140°F.
  • Let the steak rest before slicing so it stays juicy.
  • Use fresh herbs for the best flavor, but dried herbs work in a pinch.
  • Pair with low-carb sides like roasted asparagus, mashed cauliflower, or grilled mushrooms.
