3 large eggs (room temperature for fluffier omelette)
1 small onion (finely chopped)
1 green chilli (finely chopped, optional)
1/4 cup fresh coriander leaves (chopped)
1/4 tsp turmeric powder
1/4 tsp red chilli powder (optional)
Salt (to taste)
1 tbsp ghee or butter
Optional: 1/4 cup chopped tomatoes or capsicum (bell pepper)
Crack the eggs into a bowl and add turmeric powder, red chilli powder, and salt. Whisk well to combine.
Add the chopped onions, green chilli, and coriander leaves into the egg mixture. Mix again.
Heat a pan over medium heat and add ghee or butter. Allow it to melt and coat the pan.
Pour the egg mixture into the pan. Let it cook for 1-2 minutes, allowing the edges to set.
Once the edges begin to lift, gently fold the omelette in half or flip it to cook both sides (depending on your texture preference).
Cook for an additional 1 minute, then remove from the pan. Serve immediately.
