Spicy, juicy jerk chicken bites made for the keto diet. Easy to prep, full of flavor, and perfect for low-carb meals, snacks, or holiday parties.
1.5 lbs boneless, skinless chicken thighs, cut into bite-size pieces
2 tbsp sugar-free jerk seasoning
1 tbsp olive oil
1 tbsp coconut aminos or soy sauce
1 tbsp lime juice
2 garlic cloves, minced
Optional: pinch of cayenne for extra heat
Optional toppings: lime wedges, chopped cilantro, scallions
Mix jerk seasoning, olive oil, coconut aminos, lime juice, and garlic in a bowl.
Add chicken and toss until coated. Cover and refrigerate for at least 1 hour or overnight.
Cook chicken in an air fryer at 375°F for 12–15 minutes, flipping halfway. Or bake at 400°F for 20–25 minutes.
Serve hot with optional toppings or over cauliflower rice.
Let chicken marinate longer for stronger flavor. Store leftovers in the fridge for up to 4 days. Reheat in the air fryer or oven.
