  • 1 lb bacon, chopped into small pieces
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup sugar-free maple syrup (Lakanto or ChocZero)
  • ¼ cup bourbon (optional)
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ¼ tsp salt

Optional Add-Ins:

  • Red pepper flakes (for heat)
  • Liquid smoke (for extra smokiness)
  • Worcestershire sauce (for more depth)

Instructions

  • Cook the Bacon – In a pan over medium heat, cook the bacon pieces until crispy (10-15 minutes). Remove and drain most of the grease, leaving 1 tbsp in the pan.
  • Sauté Onion & Garlic – Add chopped onion and cook until soft (about 5 minutes). Stir in garlic and cook for 1 more minute.
  • Deglaze with Bourbon – Pour in the bourbon, scraping up any bits from the pan. Let it simmer for 2 minutes.
  • Add Sweetness & Spice – Stir in the sugar-free maple syrup, apple cider vinegar, smoked paprika, salt, and pepper. Let cook for 5 minutes.
  • Mix in the Bacon – Return the bacon to the pan, stirring well. Simmer on low for 10-15 minutes until thickened. If needed, add water to loosen.
  • Blend (Optional) – For a smoother texture, pulse in a food processor or use an immersion blender.
  • Store & Serve – Let cool, then transfer to a jar and store in the fridge for up to 2 weeks.
