Keto Nut-Free Sunflower Bread French Toast

This keto French toast uses nut-free sunflower seed bread, making it perfect for those avoiding almonds. Soft inside, golden outside, and gluten free — a go-to for breakfast or even a low carb dessert. Fits cleanly into the keto diet, great for losing weight without giving up the feel of real French toast.

For the Bread:

  • 1 cup sunflower seed flour

  • 1/4 cup coconut flour

  • 2 tbsp ground flaxseed

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 6 large eggs

  • 1/4 cup melted butter or ghee

  • 1/4 cup unsweetened almond or coconut milk

  • 1 tsp apple cider vinegar

For the French Toast:

  • 6 slices sunflower seed bread (cooled and sliced)

  • 3 large eggs

  • 1/4 cup heavy cream or full-fat coconut milk

  • 1 tsp vanilla extract

  • 1 tsp ground cinnamon

  • Pinch of salt

  • Butter or coconut oil for frying

Instructions

  1. Make the Bread
    Preheat oven to 350°F (175°C). Mix all dry ingredients in one bowl, and whisk the wet in another. Combine, pour into a small loaf pan, and bake for 35–40 minutes. Let cool before slicing.

  2. Prep French Toast Dip
    Whisk together the eggs, cream, vanilla, cinnamon, and salt in a wide bowl.

  3. Dip the Bread
    Dip each bread slice into the egg mix for about 5–10 seconds per side.

  4. Fry the Toast
    Heat a skillet with butter or oil over medium heat. Fry each slice 2–3 minutes per side until golden and crisp on the edges.

  5. Serve Hot
    Top with sugar-free syrup or berries, or cut into sticks for dipping.

Notes

  • Don’t soak the bread too long or it can fall apart.

  • Sunflower flour can turn green when baked — totally safe and natural.

  • Toast slices before dipping if using from freezer.

  • Try stuffing two slices with cream cheese for keto stuffed french toast.

  • Can be made into keto french toast muffins with cubed bread and muffin tins.
