This keto French toast uses nut-free sunflower seed bread, making it perfect for those avoiding almonds. 1 cup sunflower seed flour
1/4 cup coconut flour
2 tbsp ground flaxseed
2 tsp baking powder
1/2 tsp salt
6 large eggs
1/4 cup melted butter or ghee
1/4 cup unsweetened almond or coconut milk
1 tsp apple cider vinegar
6 slices sunflower seed bread (cooled and sliced)
3 large eggs
1/4 cup heavy cream or full-fat coconut milk
1 tsp vanilla extract
1 tsp ground cinnamon
Pinch of salt
Butter or coconut oil for frying
Make the Bread
Preheat oven to 350°F (175°C). Mix all dry ingredients in one bowl, and whisk the wet in another. Combine, pour into a small loaf pan, and bake for 35–40 minutes. Let cool before slicing.
Prep French Toast Dip
Whisk together the eggs, cream, vanilla, cinnamon, and salt in a wide bowl.
Dip the Bread
Dip each bread slice into the egg mix for about 5–10 seconds per side.
Fry the Toast
Heat a skillet with butter or oil over medium heat. Fry each slice 2–3 minutes per side until golden and crisp on the edges.
Serve Hot
Top with sugar-free syrup or berries, or cut into sticks for dipping.
