Ingredients

Scale
  • 1 cup coconut milk (unsweetened, full-fat)
  • ½ cup sparkling water (lime-flavored recommended)
  • Juice of 1 lime (about 2 tablespoons)
  • 23 fresh mint leaves
  • 12 tablespoons sugar-free simple syrup (to taste)
  • 2 tablespoons unsweetened cranberry juice
  • Optional: 1 drop pink food coloring
  • Crushed ice

For Garnish:

  • Fresh mint sprigs
  • Lime slices
  • Unsweetened shredded coconut

Instructions

  • Prep the Glass: Dip the rim of a glass in lime juice, then roll it in shredded coconut.
  • Muddle the Mint: In a shaker or sturdy glass, gently muddle the mint leaves with lime juice to release their flavor.
  • Mix the Base: Add coconut milk, sugar-free simple syrup, and cranberry juice to the shaker. Stir until combined.
  • Add Fizz: Fill the shaker with crushed ice and pour in the sparkling water. For an alcoholic version, add a shot of white rum.
  • Shake and Serve: Gently shake, then pour into the prepped glass.
  • Garnish: Top with a mint sprig, lime slice, and a sprinkle of shredded coconut.

Notes

  • Use unsweetened, full-fat coconut milk for the best creamy texture.
  • Adjust the sweetness by adding more or less sugar-free syrup.
  • If you don’t have cranberry juice, use a splash of pomegranate juice or skip it for a milder flavor.
