Ingredients

  • 2 oz vodka
  • 1 tbsp pomegranate juice
  • ½ oz fresh lime juice
  • ½ oz keto simple syrup (made with erythritol or allulose)
  • Ice cubes

Garnish (Optional)

  • Pomegranate arils
  • Lime wheel
  • Mint sprig

Instructions

  • Prepare the keto simple syrup by heating ½ cup water and ½ cup erythritol in a small saucepan until the sweetener dissolves. Cool and store in the fridge.
  • Fill a cocktail shaker with ice.
  • Add vodka, pomegranate juice, lime juice, and keto simple syrup.
  • Shake well for 10-15 seconds until chilled.
  • Strain into a chilled martini glass.
  • Garnish with pomegranate seeds, a lime wheel, or mint. Serve and enjoy!
