Ingredients

Scale

For the Pork Chops

  • 4 bone-in pork chops, about 1 inch thick
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (optional)

For the Keto Apple Sauce

  • 1 medium zucchini, peeled and chopped
  • 1/2 cup unsweetened applesauce
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons butter
  • 12 tablespoons granulated keto sweetener (erythritol or monk fruit)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  • Season Pork Chops: Pat the pork chops dry with paper towels. Rub each chop with olive oil, then sprinkle both sides with salt, pepper, garlic powder, and smoked paprika if desired.
  • Sear the Pork Chops: Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil, swirling to coat the pan. Place the pork chops in the skillet and sear on one side for 3-4 minutes until golden-brown. Flip and cook the other side for another 3-4 minutes, or until the internal temperature reaches 145°F. Transfer chops to a plate and let them rest.
  • Prepare the Keto Apple Sauce: In the same skillet, melt butter over medium heat. Add the chopped zucchini and cook until softened, about 5-7 minutes. Stir in the unsweetened applesauce, cinnamon, nutmeg, and keto sweetener. Cook for 2-3 more minutes, stirring occasionally.
  • Blend (Optional): For a smoother sauce, use an immersion blender or transfer to a blender and puree until smooth. Add vanilla extract if desired.
  • Serve: Place a pork chop on each plate and spoon the warm keto “apple” sauce over the top. Serve immediately and enjoy!

Notes

  • Adjust sweetness to taste with keto sweetener; start with a small amount and add more if desired.
  • Sauce can be made ahead and refrigerated for up to 3 days. Reheat before serving.
  • For thicker pork chops, finish cooking in a 400°F oven after searing.
