Keto Pork Chops with Tomato Sauce Recipe

  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika

For the Tomato Sauce

  • 1 tbsp olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (no sugar added)
  • 1/2 cup chicken broth (low sodium)
  • 1/4 cup heavy cream
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • Pinch of red pepper flakes (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season and Sear the Pork Chops:
    • Pat the pork chops dry and season both sides with salt, pepper, garlic powder, and smoked paprika.
    • Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Add pork chops and cook for 3-4 minutes on each side, until golden-brown. Remove and set aside.
  2. Make the Tomato Sauce:
    • In the same skillet, add 1 tbsp of olive oil and diced onions. Cook for 3-5 minutes until soft.
    • Add minced garlic and cook for another 30 seconds.
    • Pour in diced tomatoes and bring to a simmer, cooking for 5 minutes.
    • Add chicken broth, oregano, basil, and red pepper flakes. Simmer for another 5 minutes.
  3. Finish the Dish:
    • Place the pork chops back into the sauce. Cover and simmer on low heat for 10-12 minutes until chops are fully cooked (internal temp of 145°F).
    • Stir in the heavy cream. Let the sauce heat through and coat the pork chops.
    • Garnish with fresh parsley and serve warm.
