For the Keto Pumpkin Spice Cream Liqueur (Makes 8–10 drinks):
1 cup unsweetened almond milk
1 cup heavy cream
1/4 cup pumpkin puree (not pumpkin pie filling)
1/2 cup vodka
2 tbsp powdered erythritol (or preferred keto sweetener)
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp ground ginger
Pinch of cloves
Pinch of salt
(Optional) 1/2 tsp instant espresso powder
(Optional) 1 tbsp MCT oil or coconut cream
For Each Cocktail:
2 oz pumpkin spice keto cream liqueur
1 oz vodka
Ice cubes
(Optional) 1/2 oz cold brew coffee
In a saucepan, warm almond milk, heavy cream, and pumpkin puree on medium-low heat.
Stir in sweetener, vanilla, spices, salt, and any optional ingredients. Do not boil.
Remove from heat and let it cool for 15 minutes.
Stir in vodka.
Pour into a bottle or jar and chill in the fridge for 2 hours or more.
To make a cocktail, fill a glass with ice. Add 2 oz pumpkin spice cream liqueur and 1 oz vodka.
(Optional) Add a splash of cold brew coffee for added depth.
Stir and serve cold.
Use pure pumpkin puree, not pumpkin pie mix.
Shake the cream liqueur well before using—it may separate in the fridge.
Keeps in the fridge for up to 7 days.
Add more sweetener if needed after tasting.
For dairy-free: Use full-fat coconut milk instead of cream.
For a smoother drink, blend before serving.
