3 ripe avocados
8 oz cooked shrimp (peeled and chopped)
8 oz crab meat (or imitation crab)
1 small cucumber, finely diced
1 small red bell pepper, finely diced
2 green onions, chopped
Small handful parsley or cilantro (optional)
3 Tbsp mayonnaise
2 tsp lemon juice
1/2 tsp Dijon or yellow mustard
1/4 tsp garlic powder
Salt and pepper to taste
Smoked paprika or chili powder (optional)
In a bowl, mix mayo, lemon juice, mustard, garlic powder, salt, pepper, and paprika.
Add shrimp, crab, cucumber, red pepper, onions, and herbs. Stir gently.
Slice avocados in half, remove pits. Scoop a little extra flesh if needed.
Fill each avocado half with seafood mix.
Garnish with extra herbs or paprika.
Serve fresh, chilled, or at room temp.
Seafood mix can be made ahead and chilled.
